Hello! I’m Victoria, a Registered Dietitian born and raised in Springfield, IL, who grew up with dreams of bigger city l-i-v-i-n, real-world experiences, and following my north star – NUTRITION.
After completing my undergraduate dietetics degree at Illinois State University, I set off to live those dreams and explore the many pathways dietetics could offer. First stop: Nashville – where I danced to all the country bops down Broadway and Demonbreun, earned my DTR certification, and worked at a local hospital before applying to an accredited internship program. I was thrilled to match with my first choice – Loyola University Chicago and moved to my childhood dream city! After my Chi-town adventures and earning my RDN credential, I had a wild idea to move again. Last stop: Denver – where I’ve been ever since, living happily humbled by the mountains I now call home.
I began my career here in private practice. I loved this experience, but when COVID hit, the landscape of the practice shifted, as did my role (if only Fay had existed back then!) I took the opportunity to explore other nutrition-related avenues and transitioned into healthcare sales – something that challenged and grew me in incredible ways, while still allowing me to use my RD background to help others. Fast forward through five years in the DME/infusion space, and here I am at Fay! 💜
When I’m not working, you can find me working out or doing something active outdoors like hiking the beautiful Colorado terrain, spending quality time with friends and my rescue pup, exploring farmers markets and local restaurants, listening to music and curating Spotify playlists, or jetting off to California to visit my boyfriend.
I’m a pescatarian 🐠 and I can’t play favorites when it comes to food - I love it so much and its entirely mood-dependent, but here’s a “few favs” below 🙃
